Meatless Monday: Nopalitos Breakfast Tacos

Hello Darlings!

Carrying on my desert theme from this weekend's Summer Drink Series Margarita post, I thought it would be fun to create a recipe with cactus! Normally I tend to enjoy the cactus fruit ( prickly pear gelato is to die for!) but I thought it would be fun to try a bit of the succulent side of the plant. Nopalitos, the prepared paddles of the prickly pear plant, are easy to work with and give an interesting, vaguely sweet flavor to your typical morning tacos.




Ingredients:

- 2 Cactus Paddles, chopped
- 4 Eggs
- 1/2 Onion, diced
- 1 Avocado, chopped
- 1/4 Cup Cilantro, chopped
- 1/2 Cup Tomato, diced
- 1/4 Cup Jicama, chopped
- Corn Tortillas
- Olive Oil
- 1 Tablespoon of milk (optional)
- Salt and Pepper, to taste



Instructions:

1. Bring a large pot of water to a hard boil.
2. Add chopped cactus paddle, let boil for ten minutes. Drain


3. Coat a frying pan preheated to medium high heat with olive oil, add diced onion. Let brown.


4. In a small bowl combine eggs, milk, and salt and pepper. Whisk to mix.


5. Add egg mixture to onions, mix well.


6. Add jicama, nopalitos, and tomato to egg pan. Mix well.



7. Serve egg mixture in warmed tortillas. 
8. Top with avocado and fresh cilantro.



9. Enjoy!
