Simple Chicken Soup from Scratch

Hello Darlings!

Earlier this week you may have noticed I disappeared from the face of the blogosphere. I woke up feeling under the weather, and as the day wore on I started feeling worse and worse until all the sudden my temperature spiked to almost 104 degrees! I don’t know about you, but all I want when I’m ill is chicken soup. And when you don’t have roommates you want an easy, just about no work recipe. Well, voila: my delicious, go-to Simple Chicken Soup from Scratch! (Especially if you have already finished all the leftovers from your Lemon Herb Roasted Chicken!)


- One Whole Chicken
- 6 Large Carrots, Coarsely Chopped
- 6 Stalks Celery, Coarsely Chopped
- 2 Sweet Onions, Coarsely Chopped
- 1 Tablespoon Dried Thyme
- 1 Tablespoon Dried Parsley
- 2 Teaspoons Rosemary
- ½ Teaspoon Nutmeg
- Salt and Pepper to Taste


1. Thoroughly rinse the chicken, making sure to remove the pack of giblets inside.
2. Place the whole chicken (feel free to break it down if your pot is not big enough) in a large pot.
3. Add half of your chopped carrots, celery, and onions to the pot. Top with all spices.

4. Fill the pot with cold water so that the entire chicken is covered.
5. Bring water to a boil and then let simmer until the chicken meat starts falling off the bone when you poke it with your stirring spoon! I like to cover the pot, venting it with a wooden spoon to prevent over-evaporation.

6. During the simmering process, make sure to skim off the foam that forms on the pots surface. You can add more cold water to replace the broth removed.
7. Strain the soup, and add the broth (and cooked veggies if desired, I do) back into your original pot.
8. Remove all chicken from the bone and add back into your pot. Discard the bones!
9. Add the remainder of your raw chopped veggies and salt and pepper to taste.

10. Let simmer for ten minutes or until the veggies you added are your preferred texture!
11. Enjoy!

I apologize about the lack of pictures! If you’ve been following Chickadee Says for a while you know that I generally take pictures of every step of the cooking process, however my (pretty much literally) fried fever brain totally blanked on some steps! Which, quite frankly, I am not surprised about because (way TMI) apparently after my fever broke in the middle of the night I changed my clothes and went back to bed. No recollection of this happening, waking up in different clothing is always a surprise. Apparently sick Kait likes baseball tees. Next time I whip this up I will update with more pictures! However, I am quite proud of trying to stage while sick! Fresh herbs for the win!
