Meatless Monday: Strawberry-Vanilla Chia Pudding with Mamma Chia (and Giveaway!)

Hello Darlings!

As a self-proclaimed night owl, anything that can save me time in the morning (read: sleep in later) is a godsend. Which is one of the many reasons I love making chia pudding the night before, popping it in the fridge and waking up to a delicious, omega-3 rich ready-to-go breakfast.

Mamma Chia recently came out with lots of additions to their chia product catalog and I could not be happier! They sent me out samples of their organic products and I’ve been on a chia-high since the goodies arrived and I can’t wait to share what I loved about them, but first: the recipe!

Strawberry-Vanilla Chia Pudding

Ingredients: (Makes 2 Pints)

1 Cup Organic Mamma Chia Seeds
2 Cups Almond Milk
1 Cup Strawberries
1 Teaspoon Vanilla Extract (divided in two)

Instructions:

1. Remove the leaves and cores from your strawberries (I have a handy little tool to do this from making strawberry jam, but fingers work too!).

2. Add almond milk and strawberries into a blender and blend until smooth.

3. Add ½ cup of Mamma Chia Organic Chia Seeds to two mason jars (or containers of your choice).
4. Pour strawberry milk into jars, then add ½ teaspoon vanilla to each jar.

5. Shake well, and then pop in the refrigerator overnight.

6. When pudding is set, enjoy chilled!

While I love creating recipes out of chia seeds, especially the Organic Chia Seeds in both white and black chock full of omega-3s, protein, fiber, calcium, and magnesium from Mamma Chia) sometimes I love chucking something easy into my bag and having a chia snack on-the-go. When I first saw the Chia Squeeze Vitality Snacks I laughed: they look like baby food (think those applesauces in squeeze packs for infants).  But after I threw one in my pocketbook to have a mid-afternoon pick-me-up I was hooked.

They are super easy to eat without making a mess, taste amazing, and are full of great nutrients like complete protein, fiber, and omega-3s. The two new flavors, Mango Coconut and Wild Raspberry are blends of chia and fruit and are non-GMO, vegan, gluten free, and organic. Can’t beat that!

When it comes to the Mamma Chia brand, their Vitality Beverages were my gateway drug. I love them (especially the Blackberry Hibiscus) for how incredibly refreshing they are and how full of nutrients one drink is! In one bottle you have a quarter of your day’s recommended fiber, four grams of protein, 95mg of calcium and because of the flavor profiles, they are full of lots of antioxidants as well. Tasty and wonderful for you, they are the perfect way to treat yourself!

As an added little bonus Mamma Chia also sent over the Chia Vitality, written by the company’s founder and CEO, Janie Hoffman. The book is full of great information, including recipes, nutrition facts, yoga (!!), and even a 30-day plan to get your diet in check!

And Mamma Chia wants to stock up your pantry, fridge, and bookshelf with Mamma Chia! Enter to win a one-week supply of Mamma Chia (7 Chia Squeezes and 7 Vitality Beverages), a copy of Chia Vitality, and a Mamma Chia T-shirt!
