Meatless Monday: Vegan Maryland “Crab” Cakes

Hello Darlings!

‘Cook’ week of Meatless Mondays from A-Z is so much fun. I love that I get to discover new recipes from fellow bloggers and make them my own. This week I chose to create Lauren's (from Oatmeal After Spinning) Maryland ‘Crab’ Cakes recipe but veganized (is that even a real word?) both the crab cakes and the red pepper remoulade that she served it with! Make sure to pop over to her post for the recipe. The changes I made to make the recipes vegan are noted below!



Not going to lie, one of the main reasons I decided to make Lauren’s recipe vegan is because I wanted to bust out my (rather awesome) grain mill attachment for my stand mixer to make a flax egg. Seriously, kitchen tools are so much fun!


To veganize the 'crab' cakes swap the chicken egg for a flax one. Flax eggs are simple to make (1 Tbs FRESH flax meal + 3 Tbs water, whisk then CHILL to set) and are a rather incredible binding agent. I even posted a video on Instagram of me making one; if a 15 second video can explain the process, you know it really is easy.



How gorgeous are the ‘crab’ cake ingredients? I actually decided to make the recipe gluten free as well, by making my bread crumbs from toasted Udi’s GF bread.


I could eat this roasted red pepper and red onion remoulade by the spoonful. I swapped the greek yogurt for a vegan coconut yogurt, which gave an extra hint of sweetness-yum! Make sure you make extra to spread on sandwiches (or pretty much ANYTHING else) later!


I was amazed at how well the palm hearts worked in place of crab meat! As a New England girl at heart I'm very picky about my seafood so crab has to be the perfect texture and super fresh. The palm hearts are such an incredible textural substitute! 


Tink was being ever so naughty and wanted some of my vegan 'crab' cakes. And, yes, I was sitting on the couch chowing down; the table was messy and I just couldn't wait!
