What I Ate Wednesday: Homemade Meatless Monday

Hello Darlings!

I have been cooking up a storm this week, so today’s WIAW is chock full of delicious dishes I had whipped up over the weekend- a few of which made their way onto the blog!



For breakfast I started out light with a fruit smoothie made with frozen berries, frozen pineapple, almond milk, and a handful of spinach. I love fruit in the morning to give me a bit of an energy kick (I am not a coffee drinker) and pair that with my regular hot water/lemon/apple cider vinegar and I feel ready for the day!


I loved lunch. I munched on my leftovers from my Meatless Monday Grilled Eggplant Caprese lunch. I love blogging leftovers, after photographing a single serving of the dish I have leftovers for days! While it seems pretty silly to create a family-size recipe, I love having food ready to go afterward!


I’ve been munching on my Sea Salt and Vinegar Beet Chips for days now! I love the crispy little, good for you, chips! They satisfy my salt and crunchy cravings!


I was so excited when I found butternut squash on sale. I have hijacked my mother’s spirulizer until I get the chance to purchase my own, so I spirialized the raw squash for dinner! Pop on some homemade roasted garlic tomato sauce and a bit of fresh basil, and you have a super healthy, grain free dinner!


I totally blanked on photographing dessert but I was bad and bought leftover (50% off!) Valentine’s Day chocolates at the convenience store. I’m a sucker for a good sale, and good chocolate!
